Shizuka Ryokan is renowned for its authentic traditional cuisine.

Indeed, it is one of the few venues in Australia offering a fully authentic Japanese breakfast menu.

With advance notice at the time of initial booking, we will happily discuss and accommodate most special dietary requirements.

The menus on these pages are indicative of our breakfast, banquet dinner and izakaya (tapas style) cuisine offerings.

Occasionally, some variations may occur due to menu development and the seasonal availability of some ingredients.

LIQUOR

Shizuka Ryokan is fully licenced. A quality selection of still and sparkling wines, local and imported beers, Japanese sake and specialized liquor are all available to guests to enjoy in their rooms, at dinner or even to take-away. A comprehensive wine list is available in each guestroom and from reception. BYO wine is welcome at a $5 corkage per room.

ROOM SERVICE AND MINI BAR

A selection of local and Japanese snacks as well as alcoholic and non-alcoholic drinks are available for consumption in the guestrooms and also to take-away. A list is provided in each room.

Green Tea Shortbread

For many of our guests, one of their favourites items from the Shizuka kitchen are the light shortbreads which accompany the green tea served as a welcoming refreshment on arrival. In fact, some guests ask for a second serve or perhaps even a quantity to take home.

As green tea is traditionally served without the addition of sugar and milk, it is often accompanied by an item to provide a degree of sweetness. At Shizuka, we have fulfilled this traditional taste requirement by melding another fine Japanese tea ingredient into a western sweet treat favourite.

At Shizuka, we serve premium, young-leaf sencha style tea freshly harvested from the hilly tea plantations of Shizuoka Prefecture in central Japan. In the following shortbread recipe, we have added the fine green tea powder called macha, which is usually reserved for use during the refined Tea Ceremony, to create a unique blend of eastern and western sensibilities. Enjoy!

Ingredients

* 250g butter
* 1 tspn vanilla essence
* 1/3 cup castor sugar
* 1 tspn grated lemon rind
* 2 ¼ cups plain flour
* ¼ cup of ground rice flour
* 3 tspns macha green tea powder

Method

1. Heat oven to 150 degrees C
2. Cream butter and vanilla until light and fluffy, gradually beat in sugar and beat until very creamy
3. Work in sifted dry ingredients then add lemon rind
4. Knead well on lightly floured surface until mixture is smooth
5. Roll out until 1cm thick and use cookie cutter to cut out shapes
6. Place on baking paper on baking tray
7. Cook in slow oven for approximately 30-40 minutes or until very lightly browned
8. Shortbread will harden as they cool
9. Sprinkle icing sugar to serve
